Îá'ºêò ³ ìåòîäè äîñë³äæåííÿ. Ïðîâåäåíî âèçíà÷åííÿ âì³ñòó âàæêèõ ìåòàë³â: ðòóò³, ìèø'ÿêó, ñâèíöþ, êàäì³þ, ì³ä³ òà öèíêó ç âèêîðèñòàííÿì ô³çèêî-õ³ì³÷íèõ ìåòîä³â äîñë³äæåííÿ â îñíîâíèõ ãðóïàõ õàð÷îâèõ ïðîäóêò³â Äí³ïðîïåòðîâñüêî¿ îáëàñò³ òà ¿õ àíàë³ç çà ïåð³îä 2017-2021 ðð.

Ðåçóëüòàòè äîñë³äæåííÿ òà ¿õ îáãîâîðåííÿ. Âñòàíîâëåíî, ùî ðåã³îíàëüí³ õàð÷îâ³ ïðîäóêòè ïðîìèñëîâî çàáðóäíåíî¿ Äí³ïðîïåòðîâñüêî¿ îáëàñò³ ì³ñòÿòü òàê³ òîêñè÷í³ ìåòàëè, ÿê ñâèíåöü, êàäì³é, ðòóòü, ìèø'ÿê ó êîíöåíòðàö³ÿõ, ñåðåäí³ âåëè÷èíè ÿêèõ â³äïîâ³äàþòü â³ò÷èçíÿíèì ³ ì³æíàðîäíèì ñòàíäàðòàì ³ çäåá³ëüø òîòîæí³ àíàëîã³÷íèì äàíèì ³íøèõ ðåã³îí³â Óêðà¿íè òà ñâ³òó. Îäíàê ìàêñèìàëüí³ çíà÷åííÿ âì³ñòó ñâèíöþ â îêðåìèõ ãðóïàõ ïðîäóêò³â õàð÷óâàííÿ ïåðåâèùóâàëè ÷èíí³ íîðìàòèâè. Âì³ñò ³íøèõ êñåíîá³îòèê³â - ðòóò³ òà ìèø'ÿêó âèçíà÷àâñÿ íà ð³âí³, ùî íèæ÷å ÷óòëèâîñò³ ìåòîä³â âèçíà÷åííÿ. Ùîäî åñåíö³àëüíèõ ì³êðîåëåìåíò³â, òî âì³ñò öèíêó ó õàð÷îâèõ ïðîäóêòàõ ðåã³îíó â³äïîâ³äຠá³îëîã³÷íîìó ð³âíþ àáî çíàõîäèòüñÿ íà íèæí³é éîãî ìåæ³, ó òîé ÷àñ ÿê ñåðåäí³ çíà÷åííÿ ì³ä³ êîëèâàëèñü â³ä ð³âí³â, ùî çíàõîäÿòüñÿ íà íèæí³é ìåæ³ á³îëîã³÷íèõ çíà÷åíü äî çíèæåíîãî ó 2-2.5 ðàçè ¿¿ âì³ñòó. Âðàõîâóþ÷è, ùî êîíöåíòðàö³¿ âèùåîçíà÷åíèõ ì³êðîåëåìåíò³â ïðè êóë³íàðí³é îáðîáö³ ïðîäóêò³â çíèæóþòüñÿ íà 26-42%, ìîæíà ïðîãíîçóâàòè á³ëüø âèðàæåíèé ¿õ äåô³öèò ó õàð÷óâàíí³ íàñåëåííÿ ðåã³îíó, îñîáëèâî ì³ä³. Ó îèíàì³ö³ 2017-2021 ðð. êîíöåíòðàö³¿ åñåíö³àëüíèõ òà òîêñè÷íèõ ì³êðîåëåìåíò³â õàðàêòåðèçóþòüñÿ â³äíîñíîþ ñòàá³ëüí³ñòþ ó çåðí³ òà çåðíîáîáîâèõ ïðîäóêòàõ, ìîëîö³ òà ìîëî÷íèõ ïðîäóêòàõ, çà âèíÿòêîì çíèæåííÿ ó 1,5 ðàç³â (ð<0,05) âì³ñòó öèíêó, ïðè ïîñòóïîâîìó çðîñòàíí³ êîíöåíòðàö³é ñâèíöþ òà êàäì³þ ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ, îâî÷àõ, ôðóêòàõ òà ÿãîäàõ ó 1,2-1,7 ðàç³â (ð<0,05 - ð<0,01). Ó òîé æå ÷àñ ïîð³âíÿííÿ ðåçóëüòàò³â äîñë³äæåííÿ 2017-2021 ðð. ç ïîïåðåäí³ì 10-ð³÷íèì ïåð³îäîì äîçâîëèëè âèÿâèòè äîñòîâ³ðíå çðîñòàííÿ êîíöåíòðàö³é ñâèíöþ çà ñåðåäí³ìè çíà÷åííÿìè ó 1,5-2,8 ðàç³â â óñ³õ ãðóïàõ õàð÷îâèõ ïðîäóêò³â, êàäì³þ - ó 1,7 ðàç³â ó ì'ÿñíèõ ïðîäóêòàõ òà ð³çíîñïðÿìîâàíó äèíàì³êó êîíöåíòðàö³é åñåíö³àëüíèõ ì³êðîåëåìåíò³â.

Âèñíîâêè. Ðåçóëüòàòè ä³éñíèõ äîñë³äæåíü ñâ³ä÷àòü ïðî àêòóàëüí³ñòü ïðîáëåìè çàáåçïå÷åííÿ ÿêîñò³ òà áåçïå÷íîñò³ õàð÷îâèõ ïðîäóêò³â, íåîáõ³äí³ñòü ïîäàëüøîãî óäîñêîíàëåííÿ çàêîíîäàâñòâà ó ñôåð³ âèðîáíèöòâà òà ðåàë³çàö³¿ õàð÷îâèõ ïðîäóêò³â, éîãî ãàðìîí³çàö³¿ ç ì³æíàðîäíèì, âïðîâàäæåííÿ çàõîä³â ùîäî ïîêðàùåííÿ ÿêîñò³ òà áåçïå÷íîñò³ õàð÷îâèõ ïðîäóêò³â éóäîñêîíàëåííÿ ìåòîä³â ¿õ êîíòðîëþ íàóñ³õ ð³âíÿõ. Îòðèìàí³ íàìè äàí³ òà ¿õ àíàë³ç îá´ðóíòîâóþòü äîö³ëüí³ñòü ïîäàëüøîãî ñèñòåìàòè÷íîãî êîíòðîëþ ³ ã³ã³ºí³÷íî¿ îö³íêè êîíòàì³íîâàíîñò³ ³ ì³êðîåëåìåíòíî¿ àäåêâàòíîñò³ õàð÷îâèõ ïðîäóêò³â ïðîìèñëîâèõ òåðèòîð³é, ¿õ âïëèâó íà îðãàí³çì øëÿõîì ðîçðîáêè ³ âïðîâàäæåííÿ ïðîô³ëàêòè÷íèõ çàõîä³â çàäëÿ çáåðåæåííÿ çäîðîâ'ÿ íàñåëåííÿ.

HYGIENIC ASSESSMENT OF THE QUALITY OF FOOD PRODUCTS BY THE CONTENT OF ESSENTIAL AND TOXIC MICRO ELEMENTS

Objective. Hygienic analysis of toxicological safety and trace element adequacy of food products of the Dnipropetrovsk region in time dynamics.

Materials and. methods. The determination of the content of heavy metals: mercury, arsenic, lead, cadmium, copper and zinc using physicochemical research methods in the main groups of food products of the Dnipropetrovsk region and their analysis for the period 2017-2021 was carried out.

Results. It was established that regional food products of the industrially polluted Dnipropetrovsk region contain such toxic metals as lead, cadmium, mercury, arsenic in concentrations whose average values correspond to domestic and international standards and are mostly identical to similar data in other regions of Ukraine and the world. However, the maximum values of lead content in certain food groups exceed current regulations. The content of other xenobiotics - mercury and arsenic - was determined at a level below the sensitivity of the detection methods. Food products contain the essential trace element zinc in concentrations that mostly correspond to the biological level or were at its lower limit, while the copper content is at the lower limit of biological values or 2-2.5 times lower. Taking into account that the content of the abovementioned microelements during culinary processing of products decreases by 26-42%, it is possible to predict their deficiency in the nutrition of population of the region, especially for copper. In the dynamics of the 5-year research period, concentrations of essential and toxic trace elements are characterized by relative stability in grain and leguminous products, milk and dairy products, with the exception of a 1.5-fold decrease (p<0.05) in zinc content with a gradual increase in lead and cadmium concentrations in meat and meat products, vegetables, fruits and berries by 1.2-1.7 times (p<0 .05 - p<0.01). At the same time, a comparison of the results of the 2017-2021 study with the previous 10-year period revealed a significant increase in average lead concentrations by 1.5-2.8 times in all groups of food products, cadmium by 1.7 times in meat products and multidirectional dynamics of concentrations of essential trace elements.

Conclusions. The obtained results indicate the urgency of the problem of ensuring the quality and safety of food products, the need for further improvement of legislation in the field of food production and sale, its harmonization with international standards, the implementation of measures to improve the quality and safety of food products and the improvement of methods of their control at all levels. The data we received and their analysis justify the expediency of further systematic control and hygienic assessment of contamination and trace element adequacy of food products of industrial areas, their impact on the body through the development and implementation ofpreventive measures to preserve the health of the population.

Õàð÷óâàííÿ º âàæëèâîþ ñêëàäîâîþ çàáåçïå÷åííÿ íîðìàëüíîãî ðîñòó òà ðîçâèòêó îðãàí³çìó, éîãî ôóíêö³îíóâàííÿ [1,2]. ³äïîâ³äíî äî çàòâåðäæåíî¿ Êàá³íåòîì ̳í³ñòð³â Óêðà¿íè Êîíöåïö³¿ ðîçâèòêó ñèñòåìè ãðîìàäñüêîãî çäîðîâ'ÿ, ç ìåòîþ çì³öíåííÿ çäîðîâ'ÿ íàñåëåííÿ, ïîïåðåäæåííÿ çàõâîðþâàíü òà çá³ëüøåííÿ òðèâàëîñò³ æèòòÿ, âàæëèâà óâàãà ïðèä³ëÿºòüñÿ âèêîðèñòàííþ ó õàð÷óâàíí³ åêîëîã³÷íî-áåçïå÷íèõ ïðîäóêò³â [3]. Ó ñïåêòð³ âàæëèâèõ ïîêàçíèê³â ÿêîñò³ õàð÷îâèõ ïðîäóêò³â âàæëèâå çíà÷åííÿ íàëåæèòü õ³ì³÷íîìó ¿õ ñêëàäó.

²íòåíñèâíèé ðîçâèòîê ð³çíèõ ãàëóçåé ïðîìèñëîâîãî âèðîáíèöòâà, çàñîá³â ïåðåñóâàííÿ ïðèçâîäèòü äî çíà÷íîãî çàáðóäíåííÿ ñåðåäîâèùà õ³ì³÷íèìè ðå÷îâèíàìè [4,5]. Ñåðåä çàáðóäíþþ÷èõ ðå÷îâèí õ³ì³÷íî¿ ïðèðîäè âàãîìå ì³ñöå íàëåæèòü âàæêèì ìåòàëàì - ãðóï³ õ³ì³÷íèõ åëåìåíò³â ç âëàñòèâîñòÿìè ìåòàë³â (â òîìó ÷èñë³ ³ íàï³âìåòàëè) ³ çíà÷íîþ àòîìíîþ ìàñîþ àáî ù³ëüí³ñòþ. Îäíàê íà ñüîãîäí³øí³é äåíü òåðì³í «âàæê³ ìåòàëè» íàé÷àñò³øå ðîçãëÿäàºòüñÿ íå ç õ³ì³÷íî¿, à ç ìåäè÷íî¿ òà ïðèðîäîîõîðîííî¿ òî÷îê çîðó ³, òàêèì ÷èíîì, ïðè âêëþ÷åíí³ â öþ êàòåãîð³þ âðàõîâóþòüñÿ íå ò³ëüêè õ³ì³÷í³ ³ ô³çè÷í³ âëàñòèâîñò³ åëåìåíòà, àëå ³ éîãî á³îëîã³÷íà àêòèâí³ñòü ³ òîêñè÷í³ñòü, à òàêîæ îáñÿã âèêîðèñòàííÿ â ãîñïîäàðñüê³é ä³ÿëüíîñò³ [2]. Àäæå çíà÷íà ÷àñòèíà ìåòàë³â º íàäçâè÷àéíî òîêñè÷íèìè íàâ³òü ó ì³í³ìàëüíèõ ê³ëüêîñòÿõ, à êóìóëÿòèâíèé õàðàêòåð ¿õ íàêîïè÷åííÿ òà ì³ãðàö³¿ â óñ³õ áåç âèíÿòêó ñåðåäîâèùàõ äîâê³ëëÿ òà îðãàí³çì³ ïðèçâîäèòü äî òîãî, ùî ç êîæíèì ðîêîì çðîñòຠâïëèâ öèõ åêîòîêñèêàíò³â íà íàâêîëèøíº ñåðåäîâèùå òà îðãàí³çì ëþäèíè [4,6].

Âàæê³ ìåòàëè íå ï³ääàþòüñÿ ïðîöåñàì ðîçêëàäàííÿ, à çäàòí³ ëèøå ïåðåðîçïîä³ëÿòèñÿ ì³æ ïðèðîäíèìè ñåðåäîâèùàìè. Âîíè ìàþòü âëàñòèâ³ñòü êîíöåíòðóâàòèñÿ â æèâèõ îðãàí³çìàõ, âèêëèêàþ÷è ïðè öüîìó ð³çí³ ïàòîëîã³÷í³ ïðîöåñè [5,7,8]. Ñåðåä óñüîãî ð³çíîìàí³òòÿ âàæêèõ ìåòàë³â íàéá³ëüø³ îáñÿãè ¿õ íàäõîäæåííÿ ³ç çàñîáàìè õ³ì³çàö³¿ ïðèïàäàþòü íà ñâèíåöü, êàäì³é, ðòóòü, ìèø'ÿê, ì³äü òà öèíê [3]. Ïðè öüîìó ÿêùî ì³äü òà öèíê áåðóòü ó÷àñòü â á³îëîã³÷íèõ ïðîöåñàõ ³ º æèòòºâî íåîáõ³äíèìè ì³êðîåëåìåíòàìè äëÿ íîðìàëüíîãî ðîñòó, ðîçâèòêó ³ ôóíêö³îíóâàííÿ ðîñëèí, òâàðèí ³ ëþäèíè [2,4,9], òî òàê³ ìåòàëè ÿê ñâèíåöü, êàäì³é, ðòóòü, ìèø'ÿê òà ¿õ ñïîëóêè çä³éñíþþòü øê³äëèâèé âïëèâ íà îðãàí³çì ëþäèíè, çäàòí³ íàêîïè÷óâàòèñÿ â òêàíèíàõ, âèêëèêàþ÷è ðÿä çàõâîðþâàíü òà âèçíà÷àþòüñÿ ÿê òîêñè÷í³ [2,10,11].

Õàð÷îâ³ ïðîäóêòè º îñíîâíèì äæåðåëîì ì³íåðàëüíèõ ðå÷îâèí äëÿ ëþäèíè òà õàðàêòåðèçóþòüñÿ ð³çíèì ¿õ âì³ñòîì çàëåæíî â³ä âèäó ñèðîâèíè, ÿêà âèêîðèñòîâóºòüñÿ äëÿ âèðîáíèöòâà ïðîäóêò³â õàð÷óâàííÿ, óìîâ âèðîùóâàííÿ, çáåð³ãàííÿ, ïåðåðîáêè ñèðîâèíè, ïðèãîòóâàííÿ ãîòîâî¿ ïðîäóêö³¿ òîùî [10,12,13]. Òîìó âèâ÷åííÿ ïðîñòîðîâî-÷àñîâèõ îñîáëèâîñòåé õ³ì³÷íîãî ñêëàäó îñíîâíèõ ãðóï õàð÷îâèõ ïðîäóêò³â çà âì³ñòîì ì³êðîåëåìåíò³â, ¿õ îñîáëèâîñòåé çàëåæíî â³ä âèäó õàð÷îâîãî ïðîäóêòó ìຠâàæëèâå çíà÷åííÿ ç ïîçèö³é ïðîô³ëàêòè÷íî¿ ìåäèöèíè äëÿ çàáåçïå÷åííÿ ÿêîñò³ òà áåçïå÷íîñò³ õàð÷îâèõ ïðîäóêò³â.

Ìåòà ðîáîòè. ó㳺í³÷íèé àíàë³ç òîêñèêîëîã³÷íî¿ áåçïåêè òà ì³êðîåëåìåíòíî¿ ïîâíîö³ííîñò³ õàð÷îâèõ ïðîäóêò³â Äí³ïðîïåòðîâñüêî¿ îáëàñò³ â äèíàì³ö³ ÷àñó.

Îá'ºêò ³ ìåòîäè äîñë³äæåííÿ. Ïðîâåäåíî àíàë³ç âì³ñòó òîêñè÷íèõ åëåìåíò³â, à ñàìå: âàæêèõ ìåòàë³â - ðòóò³, ìèø'ÿêó, ñâèíöþ, êàäì³þ òà åñåíö³àëüíèõ ì³êðîåëåìåíò³â - ì³ä³ òà öèíêó, ùî âèçíà÷àëèñü íà áàç³ ñàí³òàðíî-ã³ã³ºí³÷íî¿ ëàáîðàòî𳿠Äåðæàâíî¿ óñòàíîâè "Äí³ïðîïåòðîâñüêèé îáëàñíèé öåíòð êîíòðîëþ òà ïðîô³ëàêòèêè õâîðîá ̳í³ñòåðñòâà îõîðîíè çäîðîâ'ÿ Óêðà¿íè" ïðîòÿãîì 2017-2021 ðð. ç âèêîðèñòàííÿì ô³çèêî-õ³ì³÷íèõ ìåòîä³â äîñë³äæåííÿ ó ì³ñöåâèõ õàð÷îâèõ ïðîäóêòàõ Äí³ïðîïåòðîâñüêî¿ îáëàñò³. Äîñë³äæåííþ ï³äëÿãàëè îñíîâí³ ãðóïè ïðîäóêò³â õàð÷óâàííÿ: çåðíî òà çåðíîáîáîâ³ ïðîäóêòè, ìîëîêî òà ìîëî÷í³ ïðîäóêòè, ì'ÿñî ³ ì'ÿñí³ ïðîäóêòè, îâî÷³, ôðóêòè òà ÿãîäè, óñüîãî ïðîàíàë³çîâàíî 1750 ïðîá õàð÷îâèõ ïðîäóêò³â. Îö³íêó îòðèìàíèõ äàíèõ ïðîâîäèëè â³äïîâ³äíî äî âèìîã ÷èííîãî çàêîíîäàâñòâà ùîäî áåçïå÷íîñò³ òà ÿêîñò³ õàð÷îâèõ ïðîäóêò³â çà íîðìàòèâàìè âì³ñòó õ³ì³÷íèõ ðå÷îâèí ó õàð÷îâèõ ïðîäóêòàõ çã³äíî ç Äåðæàâíèìè ñòàíäàðòàìè Óêðà¿íè (ÄÑÒÓ) íà ïðîäóêö³þ, Äåðæàâíèìè ñàí³òàðíèìè ïðàâèëàìè ³ íîðìàìè "Ìàêñèìàëüíî äîïóñòèì³ ð³âí³ îêðåìèõ çàáðóäíþþ÷èõ ðå÷îâèí ó õàð÷îâèõ ïðîäóêòàõ" â³ä 13.05.2013 ¹368, ç³ çì³íàìè [14], òåõí³÷íèìè óìîâàìè âèðîáíèöòâà õàð÷îâî¿ ïðîäóêö³¿, ïîð³âíÿííÿ ç ì³æíàðîäíèìè ñòàíäàðòàìè ÔÀÎ ÂÎÎÇ [15] òà äàíèìè íàóêîâî¿ ë³òåðàòóðè.

Ñòàòèñòè÷íà îáðîáêà îòðèìàíèõ ðåçóëüòàò³â ïðîâåäåíà íà ïåðñîíàëüíîìó êîìï'þòåð³ ç âèêîðèñòàííÿì ñòàòèñòè÷íîãî ïàêåòó STATISTICA 6.1 (ë³öåíç³éíèé íîìåð AGAR909E415822FA). Äëÿ ïåðâèííî¿ ï³äãîòîâêè òàáëèöü òà ïðîì³æíèõ ðîçðàõóíê³â âèêîðèñòîâóâàëè ïàêåò Microsoft Excel. Äëÿ îö³íþâàííÿ äîñòîâ³ðíîñò³ ðîçá³æíîñòåé ì³æ äîñë³äæóâàíèìè ãðóïàìè áóëî âèêîðèñòàíî ïàðàìåòðè÷íèé t-êðèòåð³é Ñòüþäåíòà ç óðàõóâàííÿì îäíîð³äíîñò³ äèñïåðñ³é.

Ðåçóëüòàòè äîñë³äæåííÿ òà ¿õ îáãîâîðåííÿ

Çã³äíî ç äàíèìè Äåðæàâíî¿ ñëóæáè ñòàòèñòèêè Óêðà¿íè [16], ñåðåä óñ³õ ãðóï õàð÷îâèõ ïðîäóêò³â çà îáñÿãàìè ¿õ ñïîæèâàííÿ, à òàêîæ çà õàð÷îâîþ, á³îëîã³÷íîþ ³ åíåðãåòè÷íîþ ö³íí³ñòþ äî îñíîâíèõ ãðóï õàð÷îâèõ ïðîäóêò³â íàëåæàòü õë³áí³ ïðîäóêòè, ìîëîêî òà ìîëî÷í³ ïðîäóêòè, ì'ÿñî òà ì'ÿñí³ ïðîäóêòè, îâî÷³, ôðóêòè òà ÿãîäè. Òîìó á³ëüø äåòàëüíîìó àíàë³çó õ³ì³÷íîãî ñêëàäó çà âì³ñòîì åñåíö³àëüíèõ òà òîêñè÷íèõ ì³êðîåëåìåíò³â ç ãðóïè âàæêèõ ìåòàë³â ï³äëÿãàëè ñàìå ö³ ãðóïè õàð÷îâèõ ïðîäóêò³â.

Çåðíî òà çåðíîáîáîâ³ ïðîäóêòè º îäíèì ç îñíîâíèõ äæåðåë íàäõîäæåííÿ åñåíö³àëüíèõ íóòð³ºíò³â òà ð³çíîìàí³òíèõ êñåíîá³îòèê³â äî îðãàí³çìó ëþäèíè, ùî îñîáëèâî àêòóàëüíî â óìîâàõ ïðîìèñëîâèõ ðåã³îí³â. Çã³äíî ç ðåçóëüòàòàìè íàøèõ äîñë³äæåíü (òàáë. 1), âì³ñò ñâèíöþ ó çåðí³ òà çåðíîáîáîâèõ ïðîäóêòàõ çà ñåðåäí³ìè çíà÷åííÿìè ïðîòÿãîì 2017-2021 ðð. çíàõîäèâñÿ íà ð³âí³ 0,175 [0,155; 0,196] (95% IJ) ìã/êã, ùî íå ïåðåâèùóº ã³ã³ºí³÷í³ íîðìàòèâè çã³äíî ç ÄÑÒÓ, Äåðæàâíèìè ã³ã³ºí³÷íèìè ïðàâèëàìè ³ íîðìàìè (0,2 ìã/êã äëÿ çëàê³â, ñòðó÷êîâèõ òà áîáîâèõ) [14] òà â³äïîâ³äຠðåêîìåíäîâàíèì ìàêñèìàëüíèì ð³âíÿì åêñïåðò³â ÔÀÎ ÂÎÎÇ (0,2 ìã/êã) [15]. Îäíàê ó îêðåìèõ ïðîáàõ çåðíà òà çåðíîáîáîâèõ ïðîäóêò³â êîíöåíòðàö³ÿ ìåòàëó ïåðåâèùóâàëà ³ñíóþ÷³ ã³ã³ºí³÷í³ íîðìàòèâè òà ì³æíàðîäí³ ñòàíäàðòè ó 1,5-2,4 ðàçè ³ âèçíà÷àëàñü íà ð³âí³ 0,301 ìã/êã ó êðóï³ ïøåíè÷í³é, 0,367 ìã/êã - ó æèò³, 0,397 ìã/êã - ó ãîðîñ³, 0,425 ìã/êã - ó ÿ÷ìåí³, 0,470 ìã/êã - ó êóêóðóäç³ òà ïøåíèö³. Êîíöåíòðàö³ÿ ³íøîãî êñåíîá³îòèêà - êàäì³þ ó çåðíîâèõ òà çåðíîáîáîâèõ ïðîäóêòàõ ó ñåðåäíüîìó ñêëàäàëà 0,0124 [0,0110; 0,0138] (95% IJ) ìã/êã, ùî íå ïåðåâèùóº â³äïîâ³äí³ íîðìàòèâè [14] òà áåçïå÷í³ ð³âí³, âèçíà÷åí³ ÔÀÎ ÂÎÎÇ.

Ïðè öüîìó, îñê³ëüêè ÷èííèìè Äåðæàâíèìè ã³ã³ºí³÷íèìè ïðàâèëàìè ³ íîðìàìè ðåãëàìåíòóºòüñÿ ìàêñèìàëüíà êîíöåíòðàö³ÿ ìåòàëó ó ð³çíèõ âèäàõ ìîëîêà, ðîçðàõóíêè äëÿ öüîãî ïðîäóêòó õàð÷óâàííÿ çä³éñíåíî îêðåìî. Ó ñåðåäíüîìó çà 5-ð³÷íèé ïåð³îä äîñë³äæåííÿ âì³ñò ñâèíöþ ó ìîëîö³ ñòàíîâèòü 0,0196 [0,018; 0,021] (95% IJ) ìã/êã, ùî â³äïîâ³äຠ³ñíóþ÷èì ã³ã³ºí³÷íèì âèìîãàì äëÿ ð³çíèõ âèä³â ìîëîêà [14] òà ìàêñèìàëüíèì ð³âíÿì, ðåêîìåíäîâàíèì ì³æíàðîäíèìè ñòàíäàðòàìè äëÿ ìîëîêà òà âòîðèííèõ ìîëî÷íèõ ïðîäóêò³â (0,02 ìã/êã). Ñë³ä çàçíà÷èòè, ùî ã³ã³ºí³÷íèé íîðìàòèâ âì³ñòó öüîãî ìåòàëó ó ìîëî÷íèõ ïðîäóêòàõ â³äñóòí³é [14], òîìó ã³ã³ºí³÷íà îö³íêà ïðîâåäåíà ëèøå ó ïîð³âíÿíí³ ç âèìîãàìè òåõí³÷íèõ óìîâ ï³äïðèºìñòâ-âèðîáíèê³â, ÿêà ñâ³ä÷èòü ïðî ¿õ â³äïîâ³äí³ñòü çàãàëîì. Îäíàê, ó îêðåìèõ âèäàõ ìîëîêà ìàêñèìàëüí³ êîíöåíòðàö³¿ ñâèíöþ ñÿãàëè 0,038-0,047 ìã/êã, ùî â³äïîâ³äຠ÷èííèì òåõí³÷íèì óìîâàì ï³äïðèºìñòâ-âèðîáíèê³â, îäíàê ó 1,9-2,4 ðàçè ïåðåâèùóº â³ò÷èçíÿí³ òà ì³æíàðîäí³ ñòàíäàðòè. Ùî ñòîñóºòüñÿ ³íøîãî ìåòàëó - êàäì³þ, éîãî êîíöåíòðàö³ÿ ó ìîëîö³ òà ìîëî÷íèõ ïðîäóêòàõ çà ñåðåäí³ìè çíà÷åííÿìè 5-ð³÷íîãî ïåð³îäó äîñë³äæåííÿ ñêëàäàëà 0,0052 [0,0032; 0,0072] (95% IJ) ìã/êã. ó㳺í³÷í³ íîðìàòèâè ð³âí³â ìåòàëó ó ö³é ãðóï³ õàð÷îâèõ ïðîäóêò³â ó ÷èííèõ Äåðæàâíèõ ã³ã³ºí³÷íèõ ïðàâèëàõ ³ íîðìàõ [14] â³äñóòí³, ùî óñêëàäíþº ïðîâåäåííÿ ã³ã³ºí³÷íî¿ îö³íêè.

Âì³ñò ñâèíöþ ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ ó ñåðåäíüîìó çà 5-ð³÷íèé ïåð³îä äîñë³äæåííÿ ñêëàäàâ 0,219 [0,195; 0,244] (95% IJ) ìã/êã, ùî íå ïåðåâèùóº â³äïîâ³äí³ ìàêñèìàëüí³ ð³âí³ äëÿ ö³º¿ ãðóïè õàð÷îâèõ ïðîäóêò³â çã³äíî ç [14] äëÿ ñóáïðîäóêò³â âåëèêî¿ ðîãàòî¿ õóäîáè, â³âö³â, ñâèíåé òà ñâ³éñüêî¿ ïòèö³ (0,5 ìã/êã). Ñåðåäí³ çíà÷åííÿ êîíöåíòðàö³¿ ìåòàëó ó ì'ÿñ³ ð³çíèõ âèä³â òâàðèí ñòàíîâèëè 0,100 [0,086; 0,113] ìã/êã, ùî òàêîæ íå ïåðåâèùóâàëî ÷èííèé ã³ã³ºí³÷íèé ñòàíäàðò (0,1 ìã/êã - äëÿ ì'ÿñà (çà âèíÿòêîì ñóáïðîäóêò³â) âåëèêî¿ ðîãàòî¿ õóäîáè, â³âö³â, ñâèíåé ³ äîìàøíüî¿ ïòèö³) [14], òàê ñàìî, ÿê ³ ð³âí³, ðåêîìåíäîâàí³ åêñïåðòàìè ÔÀÎ ÂÎÎÇ äëÿ ö³º¿ ãðóïè ïðîäóêò³â õàð÷óâàííÿ (0,1 ìã/êã äëÿ ì'ÿñà ð³çíèõ âèä³â òâàðèí) [15]. Îäíàê ñë³ä çàçíà÷èòè, ùî íå çâàæàþ÷è íà â³äïîâ³äí³ñòü êîíöåíòðàö³¿ ñâèíöþ çà ñåðåäí³ìè ïîêàçíèêàìè 5-ð³÷íîãî ïåð³îäó äîñë³äæåííÿ ÷èííîìó çàêîíîäàâñòâó, òàê ñàìî ÿê ³ òåõí³÷íèì óìîâàì ï³äïðèºìñòâ-âèðîáíèê³â, âì³ñò ìåòàëó â îêðåìèõ ïðîáàõ ì'ÿñà áóâ íà ð³âí³ 0,19 ìã/êã - ì'ÿñî âåëèêî¿ ðîãàòî¿ õóäîáè, 0,33 ìã/êã - ô³ëå êóðÿ÷å òà ì'ÿñî ñâèíèíè, ùî ó 1,9-3,3 ðàç³â âèùå ã³ã³ºí³÷íîãî íîðìàòèâó òà ì³æíàðîäíèõ ìàêñèìàëüíèõ ð³âí³â. Òàêà ñèòóàö³ÿ ïåâíèì ÷èíîì çóìîâëåíà ââåäåííÿì ó ä³þ ÷èííèõ ã³ã³ºí³÷íèõ íîðì, ÿê³ â³äïîâ³äàþòü ì³æíàðîäíèì ñòàíäàðòàì, ç ìåòîþ óäîñêîíàëåííÿ çàêîíîäàâñòâà ó ñôåð³ áåçïå÷íîñò³ òà ÿêîñò³ õàð÷îâèõ ïðîäóêò³â, ãàðìîí³çàö³¿ â³ò÷èçíÿíîãî çàêîíîäàâñòâà ç ì³æíàðîäíèì ó ñôåð³ âèðîáíèöòâà õàð÷îâèõ ïðîäóêò³â. Êð³ì òîãî, â Óêðà¿í³ îäíî÷àñíî ç äåðæàâíèìè ñòàíäàðòàìè íà õàð÷îâó ïðîäóêö³þ âèêîðèñòîâóºòüñÿ çíà÷íà ê³ëüê³ñòü òåõí³÷íèõ óìîâ, çàòâåðäæåíèõ âèðîáíèêîì àáî ³íøèì îïåðàòîðîì ðèíêó, â ÿêîìó âèçíà÷åí³ òåõí³÷í³ âèìîãè äî ïðîäóêò³â òà ïðîöåñ³â ¿õ âèðîáíèöòâà, ÿê³ ìîæóòü ìàòè ïåâí³ â³äì³ííîñò³ â³ä ³ñíóþ÷èõ íîðìàòèâ³â. Âì³ñò êàäì³þ çà ñåðåäí³ìè çíà÷åííÿìè ñòàíîâèâ 0,0166 [0,013; 0,0202] (95% IJ) ìã/êã, ùî íå ïåðåâèùóº â³äïîâ³äíèõ ìàêñèìàëüíèõ ð³âí³â [14].

Îâî÷³, ôðóêòè òà ÿãîäè, ó òîìó ÷èñë³ êàðòîïëÿ, çà ð³âíåì ñïîæèâàííÿ íàñåëåííÿì ïîñ³äàþòü ïåðøå ì³ñöå ó ñòðóêòóð³ õàð÷óâàííÿ íàñåëåííÿ Óêðà¿íè [16], à òîìó ¿õ õ³ì³÷íèõ ñêëàä, ó òîìó ÷èñë³ âì³ñò ì³êðîåëåìåíò³â ç ãðóïè âàæêèõ ìåòàë³â, ìຠâàæëèâå çíà÷åííÿ äëÿ çäîðîâ'ÿ ëþäèíè. Ðåçóëüòàòè íàøèõ äîñë³äæåíü ñâ³ä÷àòü, ùî âì³ñò ñâèíöþ ó ö³é ãðóï³ õàð÷îâèõ ïðîäóêò³â ó ñåðåäíüîìó çà 5-ð³÷íèé ïåð³îä ñêëàäàâ 0,141 [0,113; 0,170] (95% IJ) ìã/êã. Ïðè öüîìó êîíöåíòðàö³ÿ ìåòàëó îêðåìî ó îâî÷àõ áåç óðàõóâàííÿ ðîñëèí âèäó brassica, â³âñÿíîãî êîðåíÿ, ëèñòîâèõ îâî÷³â òà ñâ³æèõ ïðÿíèõ òðàâ, ãðèá³â, ìîðñüêèõ âîäîðîñòåé, ïëîäîâèõ îâî÷³â òà ôðóêò³â ñêëàäàëà 0,098 ìã/êã, ùî íå ïåðåâèùóº â³äïîâ³äí³ ã³ã³ºí³÷í³ íîðìàòèâè (0,1 ìã/êã) [14] òà áåçïå÷í³ ð³âí³, ðåêîìåíäîâàí³ ÔÀÎ ÂÎÎÇ äëÿ ö³º¿ ãðóïè ïðîäóêò³â õàð÷óâàííÿ [15]. Âì³ñò ñâèíöþ ó ³íøèõ îâî÷àõ ³ ôðóêòàõ òàêîæ áóâ íèæ÷å ³ñíóþ÷èõ ã³ã³ºí³÷íèõ ñòàíäàðò³â (0,2 ìã/êã - äëÿ æóðàâëèíè, ñìîðîäèíè, áóçèíè òà ïëîä³â ñóíè÷íîãî äåðåâà; 0,3 ìã/êã - äëÿ îâî÷³â âèäó leafy brassica, â³âñÿíîãî êîðåíÿ, ëèñòîâèõ îâî÷³â, çà âèíÿòêîì ñâ³æèõ ïðÿíèõ òðàâ òà íàñòóïíèõ ãðèá³â Agaricus bisporus, Pleurotus ostreatus, Lentinula edodes). Îäíàê ìàêñèìàëüí³ çíà÷åííÿ êîíöåíòðàö³¿ ñâèíöþ ó îêðåìèõ ïðîäóêòàõ ñÿãàëè 0,243 ìã/êã - äëÿ îã³ðêà, 0,247 ìã/êã - äëÿ öèáóë³ ð³ï÷àòî¿, 0,27 ìã/êã - äëÿ áóðÿêà, 0,36 ìã/êã - äëÿ øàìï³íüéîí³â, 0,494 ìã/êã - äëÿ êàïóñòè á³ëîêà÷àííî¿, ùî ó 1,22,7 ðàç³â âèùå â³äïîâ³äíèõ ìàêñèìàëüíèõ ð³âí³â. Êîíöåíòðàö³ÿ êàäì³þ çà ñåðåäí³ìè çíà÷åííÿìè ñêëàëà 0,0116 [0,0089; 0,0143] (95% IJ) ìã/êã àáî 0,23 ÃÄÊ [14] òà íèæ÷å ð³âíÿ, ðåêîìåíäîâàíîãî åêñïåðòàìè ÔÀÎ ÂÎÎÇ (0,05-0,2 ìã/êã äëÿ ð³çíèõ âèä³â îâî÷³â ³ ôðóêò³â).

Ðòóòü òà ìèø'ÿê â îñíîâíèõ ãðóïàõ õàð÷îâèõ ïðîäóêò³â âèçíà÷àëèñÿ íà ð³âí³, ÿêèé íèæ÷å ÷óòëèâîñò³ ìåòîä³â âèçíà÷åííÿ - 0,00015 ìã/êã òà 0,0025 ìã/êã â³äïîâ³äíî, ùî ñóòòºâî íèæ÷å ÷èííèõ ã³ã³ºí³÷íèõ ñòàíäàðò³â [14] é ðåêîìåíäîâàíèõ ÔÀÎ ÂÎÎÇ áåçïå÷íèõ ð³âí³â.

Ïîð³âíÿííÿ îòðèìàíèõ íàìè äàíèõ ùîäî çàáðóäíåííÿ ñâèíöåì îñíîâíèõ ãðóï õàð÷îâèõ ïðîäóêò³â Äí³ïðîïåòðîâñüêî¿ îáëàñò³ ç ðåçóëüòàòàìè àíàëîã³÷íèõ äîñë³äæåíü â Óêðà¿í³ òà ñâ³ò³ âèÿâèëî ïåâíó òîòîæí³ñòü éîãî êîíöåíòðàö³é ó ð³çíèõ ðåã³îíàõ íàøî¿ äåðæàâè ÿê çà ñåðåäí³ìè çíà÷åííÿìè, òàê ³ çà ìàêñèìàëüíèìè êîíöåíòðàö³ÿìè [1,6]. Ó òîé æå ÷àñ êîíöåíòðàö³¿ ìåòàëó ó ðåã³îíàëüíèõ ïðîäóêòàõ õàð÷óâàííÿ áóëè âèù³ äëÿ çåðíà òà çåðíîâèõ ïðîäóêò³â ïîð³âíÿíî ç Êèòàºì (0,09 ìã/êã) ïðè á³ëüø íèçüêèõ ïîêàçíèêàõ ïîð³âíÿíî ç ðåçóëüòàòàìè äîñë³äæåííÿ, ïðîâåäåíèìè ó ²í䳿 (1,43-3,24 ìã/êã) òà Àâñòðà볿 (0,33 ìã/êã) [7,8]. Âì³ñò ìåòàëó ó ìîëî÷í³é ïðîäóêö³¿ ðåã³îíó çà ñåðåäí³ìè çíà÷åííÿìè òîòîæíèé ðåçóëüòàòàì äîñë³äæåííÿ, ïðîâåäåíèìè ó Ïîëüù³ (0,0039-0,156 ìã/êã) [11]. Âèùèì âèÿâèâñÿ âì³ñò ñâèíöþ ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ îáëàñò³ ïîð³âíÿíî ç ðåçóëüòàòàìè äîñë³äæåíü ö³º¿ ãðóïè õàð÷îâèõ ïðîäóêò³â ó îêðåìèõ êðà¿íàõ ñâ³òó - 0,049 ìã/êã [17], 0,023±0,003 - 0,071±0,028 ìã/êã [13]. Êîíöåíòðàö³ÿ ìåòàëó ó îâî÷àõ, ôðóêòàõ òà ÿãîäàõ ðåã³îíó â³äïîâ³äຠðåçóëüòàòàì äîñë³äæåííÿ õ³ì³÷íîãî ñêëàäó ö³º¿ ãðóïè õàð÷îâèõ ïðîäóêò³â ó ³íøèõ êðà¿íàõ ñâ³òó [7,18].

Ñòîñîâíî ³íøîãî âàæêîãî ìåòàëó - êàäì³þ, ïîð³âíÿííÿ ðåçóëüòàò³â âèçíà÷åííÿ éîãî âì³ñòó â îêðåìèõ âèäàõ çåðíîâî¿ ïðîäóêö³¿, îâî÷àõ, ôðóêòàõ òà ÿãîäàõ Äí³ïðîïåòðîâñüêî¿ îáëàñò³ ïîêàçàëî òîòîæí³ñòü îòðèìàíèõ íàìè êîíöåíòðàö³é ìåòàëó ç ðåçóëüòàòàìè äîñë³äæåíü ó ³íøèõ ðåã³îíàõ äåðæàâè [6] òà êðà¿í ñâ³òó [18]. Ó òîé æå ÷àñ êîíöåíòðàö³ÿ ìåòàëó ó ìîëîö³ òà ìîëî÷íèõ ïðîäóêòàõ ðåã³îíó âèÿâèëàñü íèæ÷îþ çà àíàëîã³÷í³ äîñë³äæåííÿ âì³ñòó ìåòàëó ó ìîëîö³ ïîð³âíÿíî ç ³íøèìè ðåã³îíàìè Óêðà¿íè (0,00350,0047 ìã/êã çà ñåðåäí³ìè çíà÷åííÿìè) [1] òà çíàõîäèòüñÿ â ìåæàõ ðåçóëüòàò³â, îòðèìàíèõ äëÿ ìîëîêà òà ìîëî÷íî¿ ïðîäóêö³¿ ó Ïîëüù³ (0,0058 ìã/êã) [11]. Ùîäî ð³âíÿ çàáðóäíåííÿ êàä쳺ì ì'ÿñà òà ì'ÿñíèõ ïðîäóêò³â, âîíî âèÿâèëîñü âèùèì ïîð³âíÿíî ç ðåçóëüòàòàìè äîñë³äæåíü ó îêðåìèõ êðà¿íàõ, äå êîíöåíòðàö³ÿ ìåòàëó ó ö³é ãðóï³ õàð÷îâèõ ïðîäóêò³â çíàõîäèëàñü íà ð³âí³ 0,0056 ìã/êã çà ñåðåäí³ìè çíà÷åííÿìè [17] àáî íå ïåðåâèùóâàëà 0,01 ìã/êã [13].

Åñåíö³àëüí³ ì³êðîåëåìåíòè ì³äü òà öèíê ó çåðíîâèõ òà çåðíîáîáîâèõ ïðîäóêòàõ çà ñåðåäí³ìè çíà÷åííÿìè 5-ð³÷íîãî ïåð³îäó äîñë³äæåííÿ ì³ñòÿòüñÿ ó êîíöåíòðàö³ÿõ 1,81 [1,52; 2,11] (95% IJ) ìã/êã òà 11,84 [9,28; 14,41] (95% IJ) ìã/êã â³äïîâ³äíî. Îñê³ëüêè ó ÷èííîìó çàêîíîäàâñòâ³ â³äñóòí³ ìàêñèìàëüíî äîïóñòèì³ ð³âí³ ¿õ âì³ñòó ó ð³çíèõ ãðóïàõ õàð÷îâèõ ïðîäóêò³â, àíàë³ç ïðîâåäåíî çà â³äïîâ³äí³ñòþ á³îëîã³÷íèì ð³âíÿì òà äàíèì ë³òåðàòóðè. Àíàë³ç âì³ñòó åñåíö³àëüíèõ ì³êðîåëåìåíò³â ïîð³âíÿíî ç ¿õ á³îëîã³÷íèìè çíà÷åííÿìè äëÿ ö³º¿ ãðóïè õàð÷îâèõ ïðîäóêò³â âèÿâèâ, ùî êîíöåíòðàö³ÿ öèíêó â³äïîâ³äàëà á³îëîã³÷íîìó ð³âíþ (4,515 ìã/êã), ó òîé ÷àñ ÿê êîíöåíòðàö³ÿ ì³ä³ çíàõîäèëàñü íà íèæí³é ¿¿ ìåæ³ çà ¿¿ ñåðåäí³ìè çíà÷åííÿìè (1,7-3,0 ìã/êã) [4]. Ïîð³âíÿííÿ îòðèìàíèõ ðåçóëüòàò³â ç äàíèìè ë³òåðàòóðè ³íøèõ ðåã³îí³â Óêðà¿íè ³ ñâ³òó âèÿâèëè íèæ÷èé ó 2,1 ðàçè âì³ñò ì³ä³ (3,9 ìã/êã) òà òîòîæí³ñòü âì³ñòó öèíêó (12,37 ìã/êã) ó çåðíîâèõ ïðîäóêòàõ Äí³ïðîïåòðîâñüêî¿ îáëàñò³ [10]. Òàê³ â³äì³ííîñò³ ìîæóòü áóòè çóìîâëåí³ äåê³ëüêîìà ïðè÷èíàìè - ç îäíîãî áîêó, âì³ñò ì³êðîåëåìåíò³â ó çåðíîâèõ òà çåðíîáîáîâèõ ïðîäóêòàõ âèçíà÷àºòüñÿ ïåðåâàæíî òèïîì çåðíà çëàê³â òà/àáî ñêëàäîì áîðîøíà, ÿêå âèêîðèñòîâóºòüñÿ äëÿ âèðîáíèöòâà - ì³íåðàëüí³ ðå÷îâèíè çäåá³ëüøîãî ì³ñòÿòüñÿ â àëåéðîíîâîìó øàð³ çåðíà ³, òàêèì ÷èíîì, ö³ëüíîçåðíîâ³ ïðîäóêòè áàãàòø³ òàêèìè åëåìåíòàìè [10]. Ç ³íøîãî áîêó - êîíöåíòðàö³¿ ì³êðîåëåìåíò³â çóìîâëåí³ ñòóïåíåì íàäõîäæåííÿ õ³ì³÷íèõ ðå÷îâèí ï³ä ÷àñ ¿õ âèðîùóâàííÿ çàëåæíî â³ä ð³âíÿ çàáðóäíåííÿ ´ðóíò³â ³ ðóõëèâîñò³ õ³ì³÷íèõ ôîðì âàæêèõ ìåòàë³â, óìîâàìè ³ òðèâàë³ñòþ çáåð³ãàííÿ, òðàíñïîðòóâàííÿ òîùî.

Âì³ñò ì³ä³ ó ìîëî÷íèõ ïðîäóêòàõ çà ñåðåäí³ìè çíà÷åííÿìè âèÿâèâñÿ íà ð³âí³ 0,19 [0,11; 0,27] (95% IJ) ìã/êã, öèíêó - íà ð³âí³ 3,61 [2,94; 4,28] (95% IJ) ìã/êã. Ïðè öüîìó, ÿêùî âì³ñò öèíêó â³äïîâ³äຠá³îëîã³÷íîìó ð³âíþ (1,6-6 ìã/êã) äëÿ äàíî¿ ãðóïè õàð÷îâèõ ïðîäóêò³â, òî êîíöåíòðàö³ÿ ì³ä³ âèÿâèëàñü ó 2 ðàçè íèæ÷îþ (0,4 ìã/êã) [4]. Ïîð³âíÿííÿ îòðèìàíèõ íàìè ðåçóëüòàò³â ç äàíèìè ë³òåðàòóðè ³íøèõ ðåã³îí³â Óêðà¿íè ³ ñâ³òó âèÿâèëè òîòîæí³ñòü êîíöåíòðàö³é á³îòè÷íèõ ì³êðîåëåìåíò³â ç ³íøèìè ðåã³îíàìè Óêðà¿íè [1] òà ñâ³òó (0,0015-4,94 ìã/êã äëÿ ì³ä³ òà 0,01-56,44 ìã/êã äëÿ öèíêó) [11].

Ì'ÿñî òà ì'ÿñí³ ïðîäóêòè ì³ñòÿòü ì³äü ó ñåðåäí³é êîíöåíòðàö³¿, ùî çà 5-ð³÷íèé ïåð³îä äîñë³äæåííÿ ñêëàäຠ0,73 [0,60; 0,86] (95% IJ) ìã/êã, öèíê - 11,86 [8,47; 15,26] (95% IJ) ìã/êã. Ïðè öüîìó êîíöåíòðàö³¿ ì³ä³ âèÿâèëèñü ó 2,5 ðàçè íèæ÷èìè íèæíüî¿ ìåæ³ á³îëîã³÷íèõ çíà÷åíü (1,8-4,0 ìã/êã) çà â³äïîâ³äíîñò³ ð³âíÿ öèíêó (5-25 ìã/êã) [4]. Âðàõîâóþ÷è, ùî ïðè êóë³íàðí³é îáðîáö³ ïðîäóêò³â êîíöåíòðàö³ÿ öèíêó ó ãîòîâèõ ñòðàâàõ çìåíøóºòüñÿ íà 42%, ì³ä³ - íà 26% [9], ìîæíà î÷³êóâàòè äåô³öèò åñåíö³àëüíèõ ì³êðîåëåìåíò³â, îñîáëèâî ì³ä³, ó õàð÷îâèõ ðàö³îíàõ íàñåëåííÿ ïðîìèñëîâîãî ðåã³îíó. Ïîð³âíÿííÿ îòðèìàíèõ íàìè ðåçóëüòàò³â ç äàíèìè ë³òåðàòóðè ³íøèõ êðà¿í ñâ³òó âèÿâèëè äåùî íèæ÷³ êîíöåíòðàö³¿ öèíêó ó ö³é ãðóï³ õàð÷îâèõ ïðîäóêò³â (14,65 ìã/êã) çà òîòîæíîñò³ ðåçóëüòàò³â äîñë³äæåííÿ ùîäî ì³ä³ [17].

Êîíöåíòðàö³ÿ á³îòè÷íîãî åëåìåíòó ì³ä³ ó îâî÷àõ, ôðóêòàõ òà ÿãîäàõ çà ñåðåäí³ìè çíà÷åííÿìè âèÿâèëàñü íà ð³âí³ 1,11 [0,65; 1,56] (95% IJ) ìã/êã, öèíêó - íà ð³âí³ 3,80 [2,48; 5,11] (95% IJ) ìã/êã, ùî â³äïîâ³äຠâñòàíîâëåíèì á³îëîã³÷íèì çíà÷åííÿì - 1,0-1,6 ìã/êã äëÿ ì³ä³ òà 3,3-4,0 ìã/êã - äëÿ öèíêó [4]. Ïîð³âíÿííÿ îòðèìàíèõ íàìè ðåçóëüòàò³â ç äàíèìè ë³òåðàòóðè ³íøèõ ðåã³îí³â Óêðà¿íè âèÿâèëè ï³äâèùåíèé âì³ñò ó ïðîáàõ ö³º¿ ãðóïè õàð÷îâèõ ïðîäóêò³â ì³ä³ (0,0011±0,0004-1,00±0,30 ìã/êã çà ñåðåäí³ìè çíà÷åííÿìè äëÿ îêðåìèõ âèä³â îâî÷³â òà ôðóêò³â) òà òîòîæí³ñòü êîíöåíòðàö³é öèíêó ç ³íøèìè ðåã³îíàìè Óêðà¿íè (0,025±0,008-4,9±1,4 ìã/êã) [1], îäíàê ñóòòºâî íèæ÷èé ðåçóëüòàò³â äîñë³äæåíü ó ³íøèõ êðà¿íàõ (3,54±0,83-9,74±1,83 ìã/êã çà ñåðåäí³ìè çíà÷åííÿìè äëÿ îêðåìèõ âèä³â ôðóêò³â òà îâî÷³â äëÿ ì³ä³ òà 7,86±1,69-60,55±36,02 ìã/êã - äëÿ öèíêó) [18].

Âàæëèâîþ ñêëàäîâîþ îö³íêè ð³âíÿ õ³ì³÷íîãî çàáðóäíåííÿ õàð÷îâî¿ ïðîäóêö³¿ º âèçíà÷åííÿ çì³í êîíöåíòðàö³é âàæêèõ ìåòàë³â ó ÷àñîâîìó àñïåêò³. Âñòàíîâëåíî, ùî ó äèíàì³ö³ äîñë³äæåííÿ êîíöåíòðàö³¿ åñåíö³àëüíèõ òà òîêñè÷íèõ ì³êðîåëåìåíò³â õàðàêòåðèçóâàëèñü ïåâíèìè ð³çíîñïðÿìîâàíèìè êîëèâàííÿìè äëÿ ð³çíèõ ãðóï õàð÷îâèõ ïðîäóêò³â. Òàê, âì³ñò âàæêèõ ìåòàë³â ó çåðíîâèõ òà çåðíîáîáîâèõ ïðîäóêòàõ, íåçâàæàþ÷è íà ïåâí³ êîëèâàííÿ, çàëèøàâñÿ â³äíîñíî ñòàá³ëüíèì ïðîòÿãîì 2017-2021 ðð. Ïîä³áíà ñèòóàö³ÿ ñïîñòåð³ãàºòüñÿ ùîäî ³íøî¿ ãðóïè õàð÷îâèõ ïðîäóêò³â - ìîëîêà òà ìîëî÷íî¿ ïðîäóêö³¿, äå äèíàì³êà êîíöåíòðàö³é ìåòàë³â çà 5-ð³÷íèé ïåð³îä äîñë³äæåííÿ âèÿâèëàñü íåäîñòîâ³ðíîþ çà âèíÿòêîì çíèæåííÿ ó 1,5 ðàç³â (ð<0,05) âì³ñòó öèíêó. Íà â³äì³íó â³ä ïîïåðåäí³õ ãðóï ïðîäóêò³â õàð÷óâàííÿ, â³äçíà÷àëîñÿ ïîñòóïîâå çá³ëüøåííÿ êîíöåíòðàö³é ñâèíöþ ó 1,21,5 ðàç³â, êàäì³þ - ó 1,5-1,7 ðàç³â ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ, îâî÷àõ, ôðóêòàõ òà ÿãîäàõ, öèíêó ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ, ì³ä³ - ó îâî÷àõ, ôðóêòàõ òà ÿãîäàõ - ó 1,8 ðàç³â (ð<0,05 - p<0,01).

Ó òîé æå ÷àñ äëÿ ïðîâåäåííÿ âñåá³÷íîãî àíàë³çó òà âèÿâëåííÿ çàãàëüíèõ çàêîíîì³ðíîñòåé çì³íè õ³ì³÷íîãî çàáðóäíåííÿ îñíîâíèõ ãðóï õàð÷îâèõ ïðîäóêò³â íàìè ïðîâåäåíî ïîð³âíÿëüíó îö³íêó ç íàøèìè ïîïåðåäí³ìè ðåçóëüòàòàìè êîìïëåêñíèõ äîñë³äæåíü 2006-2010 ðð. [4] ³ âñòàíîâëåíî äîñòîâ³ðíå çðîñòàííÿ ó 1,5-2,8 ðàç³â (ð<0,01 - p<0,001) êîíöåíòðàö³¿ ñâèíöþ çà ñåðåäí³ìè çíà÷åííÿìè ó 2017-2021 ðð. â óñ³õ ãðóïàõ õàð÷îâèõ ïðîäóêò³â, ùî ìîæå áóòè çóìîâëåíî, ç îäíîãî áîêó, ïîñòóïîâèì ï³äâèùåííÿì çàáðóäíåííÿ ð³çíèõ îá'ºêò³â äîâê³ëëÿ íà óñ³õ ëàíöþãàõ ì³ãðàö³¿, à òàêîæ êóìóëÿö³ºþ ìåòàëó ó ðîñëèíàõ ³ îðãàí³çì³ òâàðèí, ç ³íøîãî - ïîñèëåííÿì êîíòðîëþ ùîäî ÿêîñò³ òà áåçïå÷íîñò³ õàð÷îâèõ ïðîäóêò³â, âïðîâàäæåííÿì íîâèõ, á³ëüø ÷óòëèâèõ ìåòîä³â äîñë³äæåííÿ. Äèíàì³êà êîíöåíòðàö³¿ êàäì³þ â îñíîâíèõ ãðóïàõ õàð÷îâèõ ïðîäóêò³â âèÿâèëàñü íåäîñòîâ³ðíîþ çà âèíÿòêîì çðîñòàííÿ ó 1,7 ðàç³â éîãî âì³ñòó ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ (ð<0,05). Ó 2017- 2021 p. ïîð³âíÿíî ç 2006-2010 pp. ñïîñòåð³ãàºòüñÿ ð³çíîñïðÿìîâàíà äèíàì³êà êîíöåíòðàö³é åñåíö³àëüíèõ ì³êðîåëåìåíò³â - ï³äâèùåííÿ ó 1,6-2,6 ðàç³â êîíöåíòðàö³¿ öèíêó (ð<0,01) çà çíèæåííÿ ó 2,0 ðàçè (ð<0,01) âì³ñòó ì³ä³ ó ïðîäóêòàõ òâàðèííîãî ïîõîäæåííÿ çà â³äñóòíîñò³ äîñòîâ³ðíèõ çì³í ó ïðîäóêòàõ ðîñëèííîãî ïîõîäæåííÿ.

Âèñíîâêè

Ðåã³îíàëüí³ õàð÷îâ³ ïðîäóêòè, ÿê ïðèðîäí³ êóìóëÿíòè, ïðîìèñëîâî çàáðóäíåíî¿ Äí³ïðîïåòðîâñüêî¿ îáëàñò³ ì³ñòÿòü òàê³ òîêñè÷í³ ìåòàëè, ÿê ñâèíåöü, êàäì³é, ðòóòü, ìèø'ÿê ó êîíöåíòðàö³ÿõ, ñåðåäí³ âåëè÷èíè ÿêèõ â³äïîâ³äàþòü â³ò÷èçíÿíèì ³ ì³æíàðîäíèì ñòàíäàðòàì ³ çäåá³ëüø òîòîæí³ àíàëîã³÷íèì äàíèì ³íøèõ ðåã³îí³â Óêðà¿íè òà ñâ³òó. Îäíàê ìàêñèìàëüí³ çíà÷åííÿ âì³ñòó ñâèíöþ â îêðåìèõ ãðóïàõ ïðîäóêò³â õàð÷óâàííÿ ïåðåâèùóþòü â³ò÷èçíÿí³ òà ì³æíàðîäí³ íîðìàòèâíó 1,2-3,3 ðàçè.

Âì³ñò åñåíö³àëüíèõ ì³êðîåëåìåíò³â ó îñíîâíèõ ãðóïàõ õàð÷îâèõ ïðîäóêò³â çà ñåðåäí³ìè çíà÷åííÿìè ñÿãຠ1,81 ìã/êã äëÿ ì³ä³ òà 11,86 ìã/êã - äëÿ öèíêó. Ïðè öüîìó ÿêùî êîíöåíòðàö³ÿ öèíêó çäåá³ëüø â³äïîâ³äຠá³îëîã³÷íîìó ð³âíþ ó äîñë³äæóâàíèõ ãðóïàõ õàð÷îâèõ ïðîäóêò³â àáî çíàõîäèòüñÿ íà íèæí³é éîãî ìåæ³, òî âì³ñò ì³ä³ çíàõîäèòüñÿ íà íèæí³é ìåæ³ á³îëîã³÷íèõ çíà÷åíü äëÿ çåðíà òà çåðíîáîáîâèõ ïðîäóêò³â, îâî÷³â, ôðóêò³â ³ ÿã³ä òà ó 2-2,5 ðàçè íèæ÷å â³äïîâ³äíèõ á³îëîã³÷íèõ ð³âí³â äëÿ ìîëî÷íèõ òà ì'ÿñíèõ ïðîäóêò³â. Âðàõîâóþ÷è, ùî ïðè êóë³íàðí³é îáðîáö³ ïðîäóêò³â âòðà÷àºòüñÿ äî 26-42% âèùåçàçíà÷åíèõ ì³êðîåëåìåíò³â, ìîæíà ïðîãíîçóâàòè á³ëüø âèðàæåíèé ¿õ äåô³öèò ó õàð÷óâàíí³ íàñåëåííÿ ðåã³îíó, îñîáëèâî ì³ä³.

Ó äèíàì³ö³ 5-ð³÷íîãî ïåð³îäó äîñë³äæåííÿ êîíöåíòðàö³¿ åñåíö³àëüíèõ òà òîêñè÷íèõ ì³êðîåëåìåíò³â õàðàêòåðèçóþòüñÿ ïåâíèìè ð³çíîñïðÿìîâàíèìè êîëèâàííÿìè äëÿ ð³çíèõ ãðóï õàð÷îâèõ ïðîäóêò³â. Ïðè â³äíîñí³é ñòàá³ëüíîñò³ äîñë³äæåíèõ ì³íîðíèõ ðå÷îâèí ó çåðí³ òà çåðíîáîáîâèõ ïðîäóêòàõ, ìîëîö³ òà ìîëî÷íèõ ïðîäóêòàõ, çà âèíÿòêîì çíèæåííÿ ó 1,5 ðàç³â (ð<0,05) âì³ñòó öèíêó, â³äçíà÷àëîñÿ ïîñòóïîâå çá³ëüøåííÿ êîíöåíòðàö³é ñâèíöþ òà êàäì³þ ó 1,2-1,7 ðàç³â ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ, îâî÷àõ, ôðóêòàõ òà ÿãîäàõ, öèíêó - ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ, ì³ä³ - ó îâî÷àõ, ôðóêòàõ òà ÿãîäàõ (ð<0,05 - ð<0,01). Ïðè öüîìó ïîð³âíÿííÿ ðåçóëüòàò³â äîñë³äæåííÿ 2017-2021 ðð. ç íàøèìè äàíèìè çà ïîïåðåäí³é 10-ð³÷íèé ïåð³îä âèÿâèëè ïîñòóïîâå çðîñòàííÿ ñåðåäí³õ êîíöåíòðàö³é ñâèíöþ ó 1,5-2,8 ðàç³â â óñ³õ ãðóïàõ õàð÷îâèõ ïðîäóêò³â (ð<0,01 - ð<0,001), êàäì³þ - ó 1,7 ðàç³â ó ì'ÿñ³ òà ì'ÿñíèõ ïðîäóêòàõ (ð<0,05) òà ð³çíîñïðÿìîâàíó äèíàì³êó âì³ñòó åñåíö³àëüíèõ ì³êðîåëåìåíò³â.

Ðåçóëüòàòè ä³éñíèõ äîñë³äæåíü ñâ³ä÷àòü ïðî àêòóàëüí³ñòü ïðîáëåìè çàáåçïå÷åííÿ ÿêîñò³ òà áåçïå÷íîñò³ õàð÷îâèõ ïðîäóêò³â, íåîáõ³äí³ñòü ïîäàëüøîãî óäîñêîíàëåííÿ çàêîíîäàâñòâà ó ñôåð³ âèðîáíèöòâà òà ðåàë³çàö³¿ õàð÷îâèõ ïðîäóêò³â, éîãî ãàðìîí³çàö³¿ ç ì³æíàðîäíèì, âïðîâàäæåííÿ çàõîä³â ùîäî ïîêðàùåííÿ ÿêîñò³ òà áåçïå÷íîñò³ õàð÷îâèõ ïðîäóêò³â é óäîñêîíàëåííÿ ìåòîä³â ¿õ êîíòðîëþ íàóñ³õ ð³âíÿõ.
